I've found myself going over on protein and fiber the past 2 days? Its not a huge amount but is that a bad thing? Will it affect my weight loss?

Not a bad thing. I usually am. Protein is always a good thing as it helps you feel full longer and also helps with repairing muscles with exercise.
Having a lot of fibre usually isn't a bad thing if you are drinking enough water. You're body will tell you if you either are getting far too much fibre (needing to go #2 frequently) or not getting enough/not drinking enough water for the amount of fibre you are eating (constipation).0
