What kind of healthy Lunches could I bring to school?

I'm having a hard time figuring out healthy lunches to bring on the go? I usually bring soup and yogurt but it gets boring, what do you recommend?

  • I teach at a school that allows me to have a mini frig in my classroom, so I bring salad almost every day. I mix romaine, spinach, red or yellow peppers, carrot shreds, chopped tomato, a pinch of shredded cheddar or some bleu cheese crumbles and of course grilled chicken breast, either seasoned or marinated in Sweet Baby Ray's buffalo wing sauce, which is low carb. I keep my own salad dressing bottle at school, because who wants to wash out a tiny Tupperware every night with old dressing in it? I change up the chicken or veggies daily. I also bring turkey/beef sticks, an apple or a clementine, and an Atkin's bar for frequent snacking. Sometimes, when I am sick of salad, which is rare, I roll up pickles on deli ham that I spread with cream cheese. Sometimes I take a Low Carb/ High Fiber wrap and put lettuce, cheese, ham, and mayo in it. Then I bring lettuce and tomato to add before I eat it. Another thing I love is the buffalo chicken I mentioned above, chopped, and mixed with bleu cheese crumbles, tomatoes, peppers, and bleu cheese dressing on a romaine leaf, which works pretty well as a no-carb wrap. Varying your beverages can make lunches more interesting as well. Good luck!
