Vegetarian recipes?

Heyo! I've been a vegetarian for 5 years now, and I don't cook...

If I do cook it's simple stuff, like spaghetti (I add meatless ground beef instead of the real thing)
Alfredo noodles (with or without meatless chik'n strips)
stuff like that.

But I would really like to try something new. And I don't live in a big city, I live in a small town. Our only grocery stores are Walmart, Kmart, and Aldi. >_>

Any help is appreciated!
Also looking for fellow vegetarians and/or vegans to add as friends =]

    Vegetarian here!!! I'm rather sick of spaghetti myself, so I recently bought a cooking light vegetarian cook book. There are seriously all kinds of recipies in there. Also, have you been to allrecipies.com? They have a HUUUUUUGE data base full of great vegetarian recipies to search through.

    I recently made a really delicious tofu casserole... which probably doesn't sound appealing to many haha, but it was easy and delicious. I'll friend you and if I come accross a recipie that's just amazing I'll get it to ya.

    The great thing about cooking is you can use your imagination. I was rubbish at following recipes, so i started doing my own thing!

    A few things ive tried lately:

    Quorn fillets, topped with grilled haloumi and wrapped with veggie bacon, serve with cous cous and sweet chilli sauce.

    Cassererole are easy. just throw in veg, i.e. sweet potato, cauliflower, carrots, onions, mushrooms, tinned tomatoes, cayanne pepper, chillies and some rice.

    Rosted veg - Corgettes, sweet potato, aubergine, onions, mushrooms, roasted in 1 cal spray oil and serve with rice, or cous cous, or spaghetti, or pasta.

    Rice with mushrooms, onions, peppers, etc with chillies and quorn pieces, with low fat coleslaw and pittas

    get creative with beans....kidney beans, black beans,chick peas etc...mash them and spice them up how you like as a great filler or replacement ' meat' for tacos,burritos, etc, combine them for a hearty chilli. I'm saying beans because they are high in protein. Lots of meat alternatives you can add to give extra depth. I can't cook either but it's fun to mess around and try things!

    Tofu casserole actually sounds delicious. There was a time when I cooked every meal, and I used tofu for pretty much everything. My favorite thing I made was tofu stir fry...that's about as far as my cooking creations go lol

    I'm hoping to find some new ones too, because I always blank when it comes to what to make. Some of the ones I make often:

    Roasted poblano salad - roast some poblano and red peppers and corn on the cob. Salad is lime juice, cilantro, black beans, onions, and queso fresco, and add the roasted peppers. You can also add avocado, and it is super good with noodles as a cold pasta salad.

    Lentils (I get ones already cooked from Trader Joe's) I usually heat them with some cherry tomatoes, onions, and mushrooms. Sometimes I add fat free coconut milk and curry, or maybe make a cold salad with some salad dressing (like cilantro) and tomatoes and green onions. Love lentils.

    Spaghetti squash - I'll make either a casserole with spaghetti sauce, low-fat cheese, fat free ricotta, and lots of veggies, or a curry, with coconut milk, curry, and veggies (and tofu sometimes)

    Baked tofu - marinade in some low call sauce, then bake for 45 minutes or so

    I made a spinach casserole a few nights ago that I loved - made some creamed spinach and broccoli: made a roux (veg broth, skim milk, fat free half & half, a little cheese, seasonings), mixed with with spinach, broccoli, onions and mushrooms. Laid down a layer of rice (a wild rice medley with lots of texture and flavor), then topped with the spinach mixture and a sprinkling of breadcrumbs.

    I also do veggie mac & cheese, make a low fat cream sauce, tons of veggies, some pasta, and bake.
