Marinades/sauces

Hi, I'm trying to teach myself to cook and make more fress meals instead of processed foods. Can anyone suggest any healthy marinades or sauces that I could put with meat to make it a bit more interesting instead of a plain chicken breast?

    We like to use a simple marinade of italian dressing. Tastes really good on chicken and steak. My hubby also likes to put a little lemon pepper on it.

    By the way, you could also try posting this in the Recipies/Nutrition folder to see if you get any other responses.

    One of my favorites is - mix together the juice of a couple lemons, extra-virgin olive oil, crushed garlic, pepper, and either some basil or cilantro. I just made this last night, using limes instead of lemons. It was very good (even better grilled); my kids both love it. Sometimes, I will also add a tablespoon of salsa to each piece of chicken before serving.
  • I like to use dry spice mixes. They dont have many calories and are quick and easy.

    For Salmon: Easy/Healthy Salmon with Coriander and Lime "Cream"

Toast these spices in a pan, on a low heat for about 2 minutes
- 1/4 cup ground coriander
- 4 teaspoons ground cumin

Combine that with
- 6 tablespoons olive oil
- 4 large garlic cloves, pressed
- 3 teaspoons grated lime peel
- Salt/Pepper to taste

Rub that on your salmon and let it marinate for at least 1 hour in the fridge. Remove extra spices from fish and cook at 450 for about 10 minutes. Check for doneness.

"Cream" sauce

Combine
- 6 tablespoons greek yougurt
- 3 tablespoons fresh lime juice
- chopped cilantro
