Onion Soup

Really random topic but i have lots of onions left at home and want to make a French Onion Soup.... ANYONE KNOW ANY GOOD HEALTHY RECEIPES?

    I adapted and modified a recipe from Bon Appetit and it is fantastic. It makes 4 servings and without doing the traditional bread/cheese on top, it is 291 calories, 12 grams of fat, and 5 grams each of protein and fiber:

    * 1/4 cup (1/2 stick) butter
    * 6 onions (about 3 pounds), sliced
    * 6 garlic cloves, sliced
    * 1/2 cup dry red wine
    * 2 cups chicken broth
    * 4 cups beef broth
    * 1 heaping teaspoon Dijon mustard

    Melt butter in heavy large saucepan over medium heat. Add onions and garlic and sauté until very tender and brown, about 45 minutes. Add wine and simmer until reduced to glaze, about 3 minutes. Stir in chicken broth, beef broth and mustard. Simmer 20 minutes. Season to taste with salt and pepper.

    Obviously if you do the slice of bread with cheese and broil it, you'll be adding more calories. I just had it the other day with the bread and one ounce of Gruyere and still came in at just over 500 calories, which isn't bad at all.
