Curried Carrot Soup - low fat, low sodium, low calorie...

Ingredients: 2 Tbsp olive oil, 1 onion, chopped, 2 Tbsp curry powder, 2 lbs carrots chopped, 4 cups (1 32 ounce package) unsalted chicken stock, 2 cups water. In a large pot, gently heat oil and cook onions until tender & translucent. Stir in curry powder. Add carrots, stir until coated. Add chicken stock. (you can use vegetable stock, too, but avoid broths that are high in sodium). Bring to gentle boil, reduce great & simmer until carrots are tender (about 20 minutes). Remove from heat. Get another large pot or bowl. Ladle half of the soup into a blender and add 1 cup of water. Puree it, then put it into 2nd pot/bowl. Do the same with the second half of the soup. Optional: serve with a dollop of fat free sour cream.
