I'm hypothyroid and I can't eat brussel sprouts, cabbage, broccoli, cauliflower etc. (Which are my favorites!!!!!!!!!!!!)

What are some other vegetables that you find filling and delicious??
P.s. I'm not a fan of raw veggies

    Most root vegetables (carrots, parsnips, turnips, rutubaga, sweet potatoes, etc.) are yummy roasted or stewed. Greens such as collards, kale, arugula, cress or spinach are wonderful cooking in sauces or soups, or lightly sauted with olive oil and garlic, or in an omelette or quiche. Fresh green beans are delicious cooked until crisp tender with mushrooms and garlic.

    Fresh beets, oh man so good!

    They only take 20-30 minutes in
    the pressure cooker at 15 psi.
    (depending on size)

    Bean sprouts, bean shoots, water chestnuts and bell peppers in Asian dishes.

    Portobello mushrooms are great. You can change what you put in them and they're pretty filling. I love frying some onion, pepper, garlic and prawns with some basil mixed in and stuffing them with that, and then putting them in the oven for 40 minutes. (:

    My favories aren't on your no list - zucchini, squash, carrots and celery.

    Edit to add green bean and corn since you like cooked veggies.
