I love Bistro Sensations Chicken Sausage. It comes in lots of flavors but I like the habanero and monterey jack. At 120 calories each, they're great to dice up and put into almost any dish. I often put 1/4 of one into a scrambled egg cup or into a stirfry. I make sure I watch my sodium intake and I'm good to go. They satisfy that desire to have something other than chicken.

Last night I sauted onion, celery, carrot, red pepper and garlic in a teaspoon of olive oil until tender. Diced one sausage and added it for a minute or so, just to warm it through and let the cheese get a little ooey. Added a couple tablespoons of frozen peas and let them heat up while the rice cooked. Stirred it all together with a cup of brown rice and a few shakes of dried oregano and freshly ground black pepper. I topped it with a couple of small gratings of fresh paresan. Yummy and very satisfying. I couldn't even eat the whole thing. Now that's a first :smile:
