Broccoli/Cheese/Mushroom/Chicken Casserole
Ingredients:
Uncle Ben's - Brown Minute Rice (1 CUP COOKED, ABOUT 1 1/3 CUPS COOKED)
General Mills - Gold Medal Wondra Shake & Pour Flour (2 TBSP)
Hood - 1% Milk (1 CUP)
Green Giant - Fresh, Broccoli Florettes (1 CUP)
Sliced - Baby Bella Mushrooms (1 CUP)
My Essentials - Natural Mexican Four Cheese (1 1/4 CUP)
Japanese Style Panko Plain Bread Crumbs (1/4 CUP)
Sweet Cream Butter Salted (2 TBSP)
Chicken - Boneless/Skinless Chicken Breast (3/4 LB)
*Preheat oven to 350*
1. Cook up 1 cup of the Brown Minute Rice according to the directions on the box. Then dump it into the bottom of a 9x13 baking dish.
2. Rinse out the pan (or use a new one if you want to make more dishes) and fill it with about an an inch or so of water and put the broccoli in too. Bring it to a boil and let it boil for 2 minutes, then strain and rinse the broccoli in cold water for about a minute. Then dump it in the casserole dish.
3. Then I threw in 3/4 a pound of pre-shredded chicken to the dish too, along with some sliced up mushrooms. Mix everything around.
4. Then rinse out your pan again and melt two tablespoons of butter in there. Then add your cup of milk & 2 TBSP of Wondra, stirring frequently. Once the Wondra is fully dissolved and the liquid is hot enough, add about 1/2 cup of shredded cheese slowly, allowing it to melt evenly. Throw in the salt, pepper, garlic salt...whatever seasonings you like.
5. Once the cheesy sauce is melted, pour it evenly across everything in the baking dish and then mix everything around again. As you're mixing, add in about another 1/2 cup of shredded cheese. At this point, I also added a little water, maybe 1/2 or 3/4 cup, just eyeball it. Taste a little bit and see if it needs anymore salt & pepper. Add if necessary.
6. After the casserole is all spread out, sprinkle 1/4 cup more of cheese, and then also about 1/4 panko bread crumbs.
7. Cover with foil, bake at 350 for 30 minutes. Uncover & bake another 5 minutes.

It really was! The recipe I based it off of called for that Campbell's condensed cheese soup....this was a MUCH healthier alternative!0
