Vegetarian meal ideas?

Help me out, I'm trying to plan out my meals for the week and I'd love some new food ideas. Summer is in full swing here in New Zealand so I have all of this wonderful season's produce to choose from. I'm vegetarian (I do eat eggs and dairy products), and I'm quite the capable cook/baker. I appreciate all suggestions :)

    Vegan quesadillas! I know you eat dairy, but the vegan cheese is lower in cals, fat, and has no cholesterol. I use brown rice tortillas, Daiya brand pepperjack + mozzerella cheese, pinto or black beans, tofu, cabbage, shredded carrots, and sometimes spinach.

    @krbn2: Mmm asparagus... Looks like an interesting recipe. I may incorporate some quinoa into that. Thanks!

    I'm vegan. Tonight we had Portobello Philly Cheese "Steakless" Sandwiches. DE-licious! http://vegancajun.blogspot.com/ The kids and the hubs had cheese on theirs. Mine was cheese-less.

    Finding vegan cheese in Australia is very difficult and it is quite expensive. I can't imagine it would be any easier in NZ.

    You're so right! I haven't seen any stores in nz that sell vegan cheese, not that I'd buy it if there were. Vegan cheese tastes funny. But then, a lot of vegan substitutes taste funny. Ah, it was the cheese that made me stop being vegan. Cheese <3
