Super filling 280 calorie breakfast omelette.

This keeps me full for hours! I had breakfast at 2:30pm (late, I know but I wake up late ;D), it's 6pm now and I've just finished my workout (strength training and 30DS) and I'm still feeling full!
Zucchini Cheddar Omelette
Ingredients:
2 eggs, beaten
Salt and pepper to taste
1 Tbsp Toasted Wheatgerm (Optional)
1 Tbsp Ground Flaxseed Meal (Optional)
1/4 cup Fat Free Shredded Cheddar (I use Kraft Fat Free Shredded Cheddar)
1/2 cup zucchini, grated
1 tsp garlic, chopped (if you like garlic)
1/4 cup Fat Free Greek Yogurt (I use Fage 0%)
Cooking spray
Combine eggs, salt, pepper, wheatgerm, flaxseed and zucchini.
Grease pan with cooking spray and have it on medium heat. Stir fry garlic until browned, then add egg mixture and top with shredded cheddar. Continue cooking until it's done, fold in half and place on plate. Serve with 1/4 cup greek yogurt (replacement for sour cream) and enjoy!
283 cals, 32P/12F/12C, 4g Fiber. Pretty good macros, especially since I'm on a relatively low carb diet.
You can tweak the recipe to add whatever vegetables you like or add anything else, you can even add crumbled up breakfast sausage patties or ham, whatever you like. I know there are already a lot of other omelette recipes floating about the MFP database, but I really liked this one so I figured I'd contribute another! Hope you like it. (:
