Any other cooks/bakers out there? Hikers too.

So, I've been on MFP for almost three weeks and have only just gotten around to introducing myself. At first I just wanted to keep track of what my body was doing, but the forums are so great that I wanted to start using the site properly. You guys are so inspiring!
I've always struggled with my weight and gone up and down a lot, both physically and mentally because of it. Anyway, two years ago I weighed in at almost 120kg which was pretty damn scary. I'd planned to travel overseas (and meet up with that old flame) so I wanted to lose weight and look excellent for my adventures. I managed to lose 30kg very fast in a not-very-healthy way, but have managed to maintain it (much better) for the last year. Still some left to go, though, which is why I'm here. I want to complete a 3,000km hike at the end of the year, so my fitness has to get much, much better. And this time I want to do it healthily.
I'm still traveling (though only six weeks to go. Sigh) and I've been working as a cook/housekeeper, which has its own challenges. Is there anyone out there who also cooks for a living? How do you handle the desserts? They're killing me! My love of baking has always been the thing that gets me in trouble.
My other motivational issues are that I absolutely and completely hate gyms, so I have to find alternate ways of exercising. Hiking is great, but I'm wearing through my shoes at a phenomenal rate! Any other creative ideas for exercise?
