Roast Ideas?

I bought these awesome English roasts on sale, they were buy one get one. How could I have resisted? I already knew what I was going to make with the first one. I made an awesome stew with mushrooms, tomatoes, and red peppers. I really like making things that I can cook on a Sunday and then eat for dinner for the rest of the week, I live alone so this saves me time and money. So I was wondering if anyone had any ideas for what I could do with the second roast? I'm not really keen on doing just a plain ol' pot roast.

    do roast the first night,but then chop it all up and makes stir fry the next night,and fajitas the next time with those leftovers. This is what my mom does all the time with roasts.

    preheat your oven to 500.
    salt and pepper your roast and put it in a pan (no water, no cover) and put it in the oven for 7 minutes per pound. turn the oven off and leave the oven door closed for 2-2.5 hours.
    slice it up thin and use for fajitas, slice it thick for steak and eggs, dice it for stirfry

    peppers mostly for the fajitas ,but you can throw in any frozen mix you have for the stirfry and anything like mushrooms,onion,tomato,or zuchini goes well in both. You can always put some rice on as a side too.
