Cajun Corn

So quick and easy to make. A delicious side dish for any meal. Yes I used to use real butter in my pre-MFP days. This is a recipe from my old food blog. So you can further reduce the calories by using whatever butter substitute you use.

4 tablespoons butter
1 tablespoon minced garlic
3 cups frozen corn , defrosted
5 teaspoons creole seasoning
salt , to taste
2 tablespoons Italian parsley , chopped (fresh)

1 Melt the butter in a medium sauce pan over medium heat.
2 When the butter has stopped foaming, add the garlic and sauté until golden, about 3 minutes.
3 Add the corn to the sauce pan and mix well.
4 Add the Creole Seasoning and season with salt to taste.
5 Cook over medium heat for about 5 minutes to allow the corn to heat through.
6 Remove the sauce pan from the heat and stir in the parsley.
7 Serve immediately.
