Mexican Lasagna

Hi all

a friend shared a recipe with me and I modified it a bit and thought I'd share it...

Mexican Lasagna:

Mountain Bread - x 4
Coles - 5 Star Extra Lean Beef Mince. 500g
Coles Organic - Red Kidney Beans - 400g Can,
Weight Watchers - Cottage Cheese, 40 g
Farmers Union - Light Greek Style Natural Yoghurt 50% Less Fat, 100 g
Mainland - Light Grated Cheddar Cheese, 50 g
Salad - Red Onion, Raw,
Fresh - Zucchini (Raw), 1 cup chopped:
Coles - Italian Tomato, Diced***, 1 container (400 gs ea.)
Old El Paso - Original Taco Seasoning Mix, 1 container

Calories
Per Serving: 279


Cook the onion in a pan, add 1 tb of water
add mince and brown
add tomatoes, taco seasoning, grated zucchini, drained kidney beans

simmer 15 minutes

take a baking dish, spray with non-stick

lay 2 sheets of mountain bread
top with 1/2 of the meat mix
lay 1 sheet of mountain bread
top with rest of meat mix
lay 1 sheet mountain bread
spread over the top with the greek yoghurt and cottage cheese mixed together
sprinkle with grated cheese

cook for 40 minutes
serves 6
