Low Calorie/Low Cholesterol Recipes?

Just wondering if anyone knows any recipes that are low cal and low cholesterol? It seems I can't find any recipes that fit one category without seriously sacrificing the other!! I try to stick with low cholesterol for my husband's sake (he has very high cholesterol) but then I end up eating like a 500 calorie meal :sad: I need a happy medium! Help! Thanks!!

    Try going vegetarian! Cooking Light (www.cookinglight.com) has a great selection of vegetarian recipies, and they have pictures for a lot of the dishes and all the nutritional information. Fish is also a good choice, like tilapia... it's very low in calories and only about 50mg of cholesterol per serving.

    Hmm...I wonder if I could persuade him to try a vegitarian meal...I forgot to mention he is very picky and we are big meat eaters :laugh: I don't like seafood but can be persuaded to eat fish occasionally...maybe I'll incorporate more fish into our diet :smile: I've never tried tilapia, any recommended way to cook it? I also forgot to mention another problem-he's trying to gain weight and I'm trying to lose, so the calorie battle can be a pain lol :laugh: Thanks!

    I totally understand... my husband is a pickier eater than my 8 year old son!

    What about beans? Does he like those? Vegetarian chili is a good option, or bean and roasted veggie quesadillas, or chick pea and cauliflower curry...

    As for the tilapia, I like it best baked with a little crust. Get some breadcrumbs, about 2Tbsp per fish (I buy mine ready made from the store, but you could make your own if you want), and a sprinkle of parmasean cheese... a little Mrs Dash (original and the tomato basil work well). Coat one side of the fish fillet with a little cooking spray, and press the crumb mixture on top... bake at 450 for about 10 minutes. It will flake easily when it's done. Serve it with some steamed veggies and a baked sweet potato. Yummy!

    If your husband is trying to gain weight, he can always just have a bigger serving too.
