Sauerkraut Soup
This one is for you Lucia. You can lower the calories by using a low-fat polish sausage. I also add more broth as needed and use a mix of chicken and veggie broth (depends on the consistency of thickness or thinness of the soup that you like).
1 lb smoked Polish sausage , cut into chunks (or Kielbasa)
5 medium potatoes , peeled and cubed
2 medium onions , chopped
2 carrots , chopped
5 cups chicken broth or 5 cups vegetable broth
2 cups sauerkraut
1 (6 ounce) can tomato paste
1 In a large saucepan, add sausage, potatoes, onions, carrots and chicken broth.
2 Bring to a boil, reduce heat and simmer for around 30 minutes, until potatoes are cooked.
3 Add sauerkraut and tomato paste, mixing well.
4 Return to a boil, reduce heat, cover and simmer another 30 minutes.

Cut the portion size down and you can freeze individual portions. That is what i do with all my soups. I make big pots and then freeze them after they cool in individual portions. It is so easy to grab a bag out of the freezer and have soup anytime I want it.0
