I chop a head of cabbage, an onion or two, several ribs of celery, fresh mushroom if I have it, broccoli, chicken broth (fat free), carrots and cook.

I never make this the same way twice. I toss in whatever veggies I have on hand. Sometimes I'll make it without broccoli, but then on day 2 or 3 I'll add that in for a bit of a change.

Calories? Roughly 50 per cup. MFP has "Diet cabbage soup" at 30 calories per cup, but since I make mine differently, I upped the calorie count so I stay under my calories.

Another favorite (and easy) soup recipe is
a package of frozen mixed veggies (carrots, peas, beans, corn),
    onion,
    potatoes (you choose how many),
a can of tomatoes and chicken broth.
    Herbs to taste.

When I make it for the family I add cooked ground venison.
    2 cups=256 calories (with meat).
