Spiced Shrimp Couscous

I love to make couscous because it’s so quick and easy. You put a lid on it, come back 5-min later to a colorful and tasty dish.

Spiced Shrimp Couscous
Serves 2

Ingredients:
¼ tsp ginger, ground
¼ tsp coriander, ground
1 ½ tsp five-spice powder
¼ tsp paprika
¼ tsp cumin
¼ tsp turmeric
12 small shrimp, peeled and cooked
2 cloves garlic, minced
½ habanera pepper, minced
2/3 cup couscous, dry
1 green onion, finely chopped
1 medium onion, finely chopped
1 tomatoes, diced
½ cup peas, frozen
½ tsp butter

Cook:
- Combine ginger, coriander, five-spice powder, paprika, cumin, and turmeric in a small mixing bowl. Add shrimp, and toss until coated in spices. Set aside for 30 min.
- In a medium-sized sauce pan heat butter, garlic, habanera, and onion over medium-high heat. Cook for 2 min.
- Add peas, tomato, shrimp. Cook for 1 min. coucous1.jpg Add 1 cup of water, bring to boil. Immediately add couscous. Cover, remove from heat and let stand for 5-min.
- Uncover the pan, and fluff the couscous with a fork. Garnish with green onions.
