Lina's Buffalo Chicken Tacos (with Pic)!
Man, it's been a long time since i've posted a recipe. 9 months of being pregnant (and psycho) really does change things! My poor husband had to figure the food out on his own during my pregnancy. The first few months food made me want to stab myself and then after that I was too big and tired to care what anyone ate or if they ate, or if they were breathing. :bigsmile:
I am back to ME and well that means you guys get recipes!
I found a recipe on Pinterest for Buffalo Chicken Tacos. They looked so good, but I knew that to make it healthier, I would have to make some changes. Oh boy, this turned out so damn good.
Prepare yourself for awesomeness, but keep in mind that I don't really do measurements. You seriously cannot screw this up. Just put as much or as little of everything as you like.
Lina's Buffalo Chicken Tacos
3 Chicken Breasts made 6 Tacos @ 272 calories for 2 tacos based on my recipe with the yogurt ranch (calculations do not include the avocados!)

Here is what you will need:
* A drizzle of EV Olive Oil
* Boneless skinless chicken breast (I used three for me and my husband - one for me, and two for him - i'm sure you guys care LOL!) - Diced into 1 inch pieces (or 2 inches, or however many inches your heart desires at the time of cooking)
* Salt to taste
* Garlic Powder to taste
* Franks Red Hot Sauce
* Corn Tortillas
* Spinach
* Diced Onions, Diced Tomatoes, Chopped Cilantro (and mix)
*Low Fat Ranch (Or do what I did and see note below)
* If I had it in my fridge, I would have used diced avocados, but I didn't, so I cried instead.
It's easy to make...
Grab a skillet and drizzle some EVOO inside of it and heat it. Once your oil is hot, add the chicken and sprinkle with salt and garlic powder. Stir. And cook. And stir. Until your chicken is white all the way through. Take skillet off stove.
Grab your bottle of Franks Awesome Sauce and add as much as you would like to your chicken. Stir and coat the chicken.
Warm your tortilla (or eat it cold, I don't care) and assemble like so...
*Spinach
*Chicken
*Onion/tomato/cilantro mix
*Drizzle with ranch
*Add the avocados if you have them
Ranch Note - I got a packet of Hidden Valley Powdered Ranch and added 1 cup 2% milk and 1 cup 0% Fage Greek Yogurt and mixed. It turned out SO good.
I am telling you guys, MAKE THIS. It is AMAZING!

This does look good!
One suggestion: take your corn tortillas and spray them with 0 calorie cooking spray then bake them in the oven at 400 for about 12 minutes. Pull them out, then fill the tortilla with ingredients and fold.
You should be able to find 45 calorie corn tortillas and after you prepare them this way, you'll never want another fried taco again.
I have always been a taco lover and have been disappointed in not being able to eat them.... until I started baking them. Yumm!0 -
Looks good. Very similar to my recipe but I use blue cheese crumbles instead of ranch.0
