Oops I got a little speedy and misspelled shrimp, haha
Anyhoo, I made this tonight and it is delicious. Served with a salad, it is better than a lot of restaurant meals I've had lately.
I doubled the orzo so I put 1 cup of uncooked orzo and 1 lb of fresh peeled and deveined shrimp to make this recipe have 4 servings so we can have lunch tomorrow. I also used 1 can of diced tomatoes with garlic and onion in place of the regular tomato.
I highly recommend it! I did see fat free feta cheese at the store so that would lower the fat if you wanted but I've never tried it, so I stuck with regular feta.
