I have just added plain tuna on wheat for lunch. I was trying to think of something to put with it. Avocado, I never thought of that, but will give it a try.0

I add Avacado and McCormick's guacamole seasoning mix to chicken salad. Can be eaten over lettuce leaves or whole grain bread.0

This is the best alfredo I have had in a long time. If you are going low carb, use spaghetti squash instead.

Vegetarian Avocado and Veggie Wrap:
fresh avocado
red, orange, and yellow sweet bell peppers
onion
garlic
red pepper
fresh spinach
lite cream cheese
low calorie/low carb tortilla
Sautee peppers, onion and garlic with olive oil spray
Spread about 1tbsp cream cheese on tortilla
Sprinkle red pepper over the cream cheese
add onion, peppers, avocado and spinach
wrap and eat!
One wrap is about 250 calories.

ETA: Also for those that have asked in the past here's something I found on the Haas Avo site:
"Trying to save that mashed or cut avocado but don’t have lemon or lime juice? Orange juice, grapefruit juice and vinegar can all help keep your cut avocado greener for longer. Just be sure to keep it in an air-tight container in the fridge."

A little extreme, but it makes a great raw pudding. Puree with agave, cocoa camino, coconut oil and vanilla, chill for a great vegan/raw treat.
I recently ate a chocolate truffle made from avocado. It was delicious.0
