Baked Chicken Bites with Italian Salsa (appetizer)

This is a recipe from a cookbook my dietician gave me.

4 skinless, boneless chicken breast (about 1 1/2 pounds of chicken), each cubed into about 6 pieces.
1/2 cup bottled fat-free Italian Salad Dressing

Salsa:

2 medium tomatoes, seeded and finely chopped
3 garlic cloves, minced
2 tablespoons flat leaf Italian Parsley, minced
1 tablespoon red wine vinegar
1 tablespoon capers (optional)

1. Combine the chicken cubes with the bottled dressing in a bowl. Cover and marinate for at least 1 hour or up to 24 hours.
2. Drain the chicken from the marinade and discard marinade.
3. Place chicken cubes on a nonstick baking sheet and set the oven temperature to broil.
4. Broil the cubes for about 2-3 minutes per side until cooked through.
5. Combine all the salsa ingredient. Set a bowl of the salsa in the center of a decorative platter. Surround with the chicken cubes speared with fancy frill picks.
