Chicken and Broccoli soup Recipe

Really easy to make in no time at all
Ingredients
225g Broccoli
55g unsalted butter
1 onion
225g Rice- optional I omitted this due to personal preferance
225g Chicken breast (raw)
25g Plain flour
300mls milk- I used skimmed milk again personal preferance
500mls Chicken stock
55g sweetcorn kernals
salt and pepper
Instructions
Step one
Break the broccoli into small florets and cook in a saucepan of lightly salted boiling water for 3 minutes, drain, and then plunge into cold water and set aside.
Step 2
Melt the butter in a pan of water over medium heat, and the onion, rice (if using) and Chicken, and cook for 5 minutes stirring frequently.
Step 3
Remove the pan from the heat and stir in the flour. Return to the heat and cook for 2 minutes, stirring constantly. Stir in the milk and then the chicken stock. Bring to the boil, stirring constantly, then reduce the heat and simmer for 10 minutes.
Step 4
Drain the broccoli and add to the pan with the sweetcorn, and salt and pepper. Simmer for a further 5 minutes, or until the rice is tender (if using), then serve
Calories per serving 163 with rice it will be more so adjust to what you want
