I kinda skimmed through my pantry wanted something yummy and filling... this did the trick:bigsmile:
4 boneless skinless chicken breasts (appx. 2lbs defrosted)
1 can of Cream of chicken
1/2 cup of 1% milk
1tsp garlic salt
1 1/2tsp pepper
2 crushed garlic cloves
1tsp thyme
4 wedges of laughing cow cheese (light Garlic and herb)
I cooked these items on high for 4hrs in my crockpot. After 4hrs I added 1 pkg of Rice a Roni "Broccili and cheese" and a package of Green Giant Broccili and Cheese Steamers (still frozen) I let it all cook for another 45-60min. I stirred it until the chicken broke up almost to a shredded state.
Topping: I used Low Sodium Stove Top Stuffing, I just made the topping seperate, put the chicken mixtre in a bowl then put the stuffing over it.
Other toppings I thnk that may be good, Crumbled Ritz crackers, Cheese or browned bread crumbs.
This makes 4-5 servings and it INCREDIBLY FILLING. Not the mention makes your house smell yummy and I couldn't even eat my full serving I was so stuffed. I haven't looked up the nutrition facts yet but will shortly. I can't imagine it'd be more then 350-400cal's though. Enjoy:bigsmile:
