Carbs %, Actually %'s in General

Alright silly question and perhaps I could find it searching and perhaps not. Now a little background information. I have PCOS with insulin resistance. Basically refined carbs hate me and I gain weight looking at them. Needless to say I am scared of carbs. I have ballooned out to 356 lbs! Yes you read that right, and I am so ashamed to admit it, but this time I am going to do it! I have been fooling around with different meal plans and carb/protein/fat ratio's for those who are "low-moderate" carber's what do you intake?

I was thinking I should be in the:
30% Carbs
30% Fat
40% Protein

or should I just stick with what MFP give me for my value's? I'm just so lost!
