Coconut oil anyone?

Who is using it? How? I have been reading a lot about this oil and how beneficial it is... I would like to give it a try

    I haven't tried it yet - as it's expensive, but one site that uses it ALL the time is:

    chocolatecoveredkatie.com - she has tons of good recipes on here and that's her oil of choice

    I bought some over the weekend. You can get less expensive brands. I asked at the store if there is a difference, taste , quality etc. and they said no. So I bought one that was $8.99 instead of $27.99
    I put it in a smoothie yesterday and it tasted fine, although I had to heat it up to liquify it and then as soon as it touched the cold smoothie it solidified again... it ended up being a little lumpy, but not really unpleasant.
    I recently read Wheat Belly, and a lot of recipies in there call for it so I've used it and I'm extremely pleased...
    I weigh in on Tuesdays and on Sunday I stopped eating grains and ADDED coconut oil. Today at weigh in I'd lost 4lbs.
    I'm not sure if it's the lack of grains, addition of coconut oil or what, but I don't feel it can hurt to try it, and so far it feels great.

    I LOVE the stuff. I buy it at an organic store, and it's pricey -- $75 for a big ice cream bucket size, but it lasts me a few months.

    Just random things I do with it:

    - fry my egg and toast in it
    - pop popcorn on the stove
    - bake brownies ESPECIALLY; they are beyond fantastic
    - put a teaspoon in my morning oatmeal
    - add it to protein shakes (melt it first, shake it quick, then down it -- it solidifies fast)
    - a teaspoon in my coffee (REALLY nice)
    - shave my legs with it
    - use it as moisturizer for my face, etc.
    - use a bit in my hair to tame my frizz (great for curls!)

    You'll hear a lot of people regurgitate old science on how "bad" coconut oil is, but it's anything but. My weight loss had stalled completely until I started adding upward of 2 tablespoons of it to my diet AND my hair, nails, and skin have benefited from it as well. Fantastic stuff, and SO tasty.
