I am looking for a low fat homemade Spanish Rice recipe. I have googled some and they are not what I am looking for.

Like the Mexican rice that is an orange color with peas and carrots?
Use whole wheat rice. (Youprobably already knew that)
For the tomatoes, only use a maximum of 3-4 tomatoes.
When you put the tomatoes in the blender, add some water. Also, use less onion and little or no garlic
Peas and carrots...I dont think they are high calorie/fat...

Spanish Rice
Serves: 4
2 Bags Boil in Bag Basmati Rice (or 2 cups cooked rice)
1 (14 oz) Can Diced Tomatoes with Green Chilies
1 cup Onion
1 tsp Cumin
1 tsp Chili Powder
1/2 cup Diced Green Chilies
1/2 cup tomato juice
Salt and Pepper to taste
Saute onion and diced green chilies in a pan with cooking spray. Once cooked, add in diced tomatoes, tomato juice, spices, and rice.Let simmer until all liquid is absorbed.
