So I saw a recipe for chicken salad sushi in a rachael ray magazine and I tweaked it to be a little more lo-cal.
Turkey Sammie Sushi Rolls
Take some whole grain bread and trim off crust. Flatten with a rolling pin (or your hands!). You can add a little low fat mayo or ranch dressing if you would like, but if not, lay on a few slices of turkey, some cucumber, carrots, lettuce, spinach, or any other veggies you like!! You can sprinkle on some shredded cheese or use a slice, if you wish. Now roll up like a sushi roll and slice. Think 2 slices of bread per serving. Count like a turkey Sammie! (only a little more fun!).
Good luck to all!
