Calorie Intake

What do you do when you are having trouble eating enough calories? My calorie intake for the day is 1600. I am lucky if I eat 1200 in a day. If I exercise then I have more caloreis that I am allowed to eat. I haven't been very hungry on this diet but I do eat atleast 3 times a day. The weight is coming off real slow and I think its because my body thinks its in starvation mode so it is storing the fat. Any suggestion would be greatly appreciated. Thanks.
