I never manage to succeed with flapjack, it either sticks to the pan/greaseproof paper or falls apart. I was looking for a fairly healthy recipe and came across this, honestly there's no turning back however I can't make it often as I can't stop eating it!

8oz oats
5oz demerera sugar
4oz wholemeal flour
1 tsp baking powder
3 ½ oz white chocolate drops
3 ½ oz dried cranberries
8oz melted butter

Preheat the oven to 180C. Line a baking tray with greaseproof paper.

Mix all of the dry ingredients well in a large bowl. Add the melted butter and stir thoroughly to ensure it’s evenly mixed.

Spread into the tin and press down so it's compact.

Bake for 25-30 minutes until the edges are turning golden brown.

Remove from the oven and leave to cool for a minute before cutting into 20 slices.

It keeps really well, if you can resist it!

Can swap the cranberries/white chocolate for other fruit and nuts.
