This recipe as-is = 85cal per muffin, of course you'll have to adjust calories if you add or change anything. I really like that it's such a versatile recipe, omit the blueberries and add cranberries, apples, etc. Enjoy!
2 Cups Whole Wheat Flour
1 Cup splenda
1 tsp Baking Soda
1 tsp Baking Powder
1/2 tsp salt
1 tsp Cinnamon
1 cup Skim Milk
1/2 cup Egg Beaters
2 tsp Vanilla Extract
2 Cups Unsweetened Applesauce
2 Cups Frozen Blueberries (unsweetened or sun-sweetened)
Preheat oven to 350
Mix all dry ingredients; mix all wet ingredients, except blueberries.
Combine wet and dry ingredients, be careful to not overmix.
Add blueberries.
Spoon into greased muffin tins and bake 30min

I wonder how it would taste using a different low/no calorie sweeter, the only one I can use is Equal, everything else hurts my stomach and usually makes me sick.0

What is Egg Beaters?
Eggbeaters are liquid eggs found in a carton in the egg section or refrigerated section of your grocery store. 1/4 cup equals 1 egg @ 20 calories instead of 70!0 -
