Greek-Style Spaghetti Squash (w/pic and nutrition)

One small-medium spaghetti squash, cut length-wise and seeds/pulp removed
¼ red onion, sliced
2 cloves garlic, minced
½ cup fresh mushrooms
2-3 roma tomatoes, pulp removed, flesh cut into cubes
½ cup fat free feta cheese, crumbled
10 kalmata olives, sliced
½ cup spinach, blanched
2 T margarine
2 tsp olive oil (if desired)


Cut the squash, remove seeds/pulp. Lay cut side down on a baking sheet and put in the oven for 45 minutes at 350 degrees.

Heat 2 T margarine in a skillet. Add the onion, garlic, tomatoes, mushrooms, and spinach. Sautee until they are tender-crisp. If desired, add the olive oil to give more coating.

Meanwhile, when the squash is finished cooking, take a spoon and scrape the insides out of it into a bowl.

Add the sautéed veggies to the squash, along with the olives and feta cheese. Toss until the spaghetti squash is coated. Top with salt and pepper if needed.

    Sounds good. I had roasted Spaghetti Squash last night with Homemade Sauce made with tomatoes, zucchini, peppers and onions. Love it!:drinker:
