I make these on a day that I am home (not at work) like today. I love them because they are low in calories, very nom, and good for you!

You will need:

2 corn tortillas (I used Mission - 80 calories)
2 Whites - (32 calories)
1/4 cup fresh spinach (2 calories)
1/2 pat of butter (18 calories)
1/2 roma tomato (9 calories)
Laughing Cow Garlic and Herb (35 Calories)

What you do:

Add butter to pan, melt.
Add your spinach and sautee for a minute.
Add your egg whites and cook
Add your laughing cow cheese and mix in with eggs
Heat your tortillas then divide your eggs in two and add to tortillas
Dice some tomatoes and add it to your breakfast tacos!

Eat the hell out of them!

Total of 176 calories for a nom.gif breakfast!

Enjoy!
