Lightened Up Sausage & Peppers!!

Ingredients:

(1) Package of Italian flavored Chicken Sausage (such as aidells pre-cooked or raw)
(1) Green Pepper
(1) Red Pepper
(1/2) White Onion
(1/2) can of Fat Free Chicken Broth (such as College Inn 99% Fat Free)
(1) package of Uncle Ben's 90-minute Brown Rice
(2) tbsp Olive Oil


If you are using the pre-cooked chicken sausage, simply microwave or heat on stove until hot, as the directions on the package call for.

In a seperate pan, combine the green peppers, red peppers and onions with a tiny bit of olive oil to sautee.
Before they start to soften and brown, pour 1/4 can of chicken broth into the peppers & onions pan, and the other 1/4 of a can into the pan with the chicken sausage.

Let simmer on low for about 5 minutes and combine BOTH pans into ONE. (I usually dump the peppers & onions into the chicken sausage pan). The chicken broth and flavors from the peppers, onions & chicken sausage create their own flavorful sauce.

Heat package of Uncle Ben's Brown Rice in the microwave for 90 seconds.

Pour the chicken sausage, peppers & onions over the rice and serve!
