easy low cal slow cooker meals

I am a single mother of 2 kids and I would like to premake meals once a week so I can just throw something in the slow cooker. I would like to combine it and store it in the freezer before i cook or cook it and store it if its easier, Anyone have any great Recipes?

  • chicken breast + jar of salsa, cook till it's done!

    You can serve like this with a side, or you can shred it up, and add beans & corn & cook for a little longer & serve over rice... Delicious!

    My favorite Slow Cooker Chili (~250 cals per 1 cup serving, makes 6 cups)

    2 cans bush's chili beans (medium)
    1 can tomato paste
    1 lb 95/5 ground beef (or turkey, chicken, whatever meat you like)
    1 small onion minced
    1 tbsp minced garlic (1-2 cloves)
    1 tsp each chili powder, paprika, ground mustard, salt, pepper, garlic powder

    Sautee the onions, then add the meat and garlic and brown. Add the spices, and stir to mix. Dump into the slow cooker with the beans and tomato paste, and stir. Cook 4-6 hours on low. I always freeze half (about 4 cups) and eat the other for the first part of the week. So yummy and easy!
