Crock-Pot Recipes!

Hi,
I wrote about a yummy chili/stew that I tried from Oxygen Magazine, and have been asked about the recipe a bunch of times. So...here it goes!
Chicken, sweet potato, and white bean chili (I think it's more like a stew
Ready in 6-8 hours
Serves 6
Approx. 150 cals/serving (I calculated the calories myself by adding all the ingredients and dividing by 6- so I suggest you do the same to get your own cal count based on the ingredients you will use!)
Ingredients:
1 cup dried navy beans (soak overnight and drain, if you want- I didn't)
4 cups low-sodium chicken broth
2 cups sweet potato, peeled and cubed
1 onion, chopped
3 cloves garlic, chopped
1 and 1/2 lbs boneless, skinless chicken breast, cubed
2 4oz cans roasted green chilies, drained (if the sodium isn't too high, you can add the juice in for added flavor)
1 tbsp ground cumin
1 tbsp dried oregano
1 tsp coriander
1/2tsp cinnamon
2 cups kale, chopped (I bought a bag all ready to use at Trader Joe's from the bagged salad section)
sea salt and pepper to taste
Procedure:
Place the beans in the slow cooker with enough broth to cover 1".
Top with the sweet potatoes, onion, garlic, and chicken.
Add remaining broth, chilies cumin, oregano, coriander, and cinnamon.
Cover and cook for 6-8 hours on low.
Once cooked, season with salt and pepper.
Stir in kale and cook another 10 minutes or until it wilts.
Serve nice and hot!
A couple pointers:
I did not soak the beans overnight
I added the juice from the chilies for flavor
I did not add sea salt at the end
I cooked the kale a little longer than 10 min because it was still too crunchy
