307 Homemade Chicken Salad.

I just spent time weighing cooking chopping so I may have chicken salad. So if you would like try it. Very yummy.

1 Whole Natural antibiotic and hormone free chicken ( yield 18 oz cooked skinless chicken)
1 cup small diced celery
120 g Kraft Olive Oil Mayo

1. Roast chicken with skin - no oil or butter added ( Your not eating the skin so why add more fat) 375 degrees for 1 1/4 to 1 1/2 hours until cooked to 165 degrees internally

2. chop 1 c celery

3. take all meat off chicken and toss out the skin and any fat. Shred it into bite size pieces

4. Add mayo, chicken, and celery. Mix

5. stir in white pepper and kosher salt to taste

Today this made 830g of chicken salad. A serving of 100g was 165 calories and curbed my craving for comfort food.
