Amazing Stuffed Tomatoes

1 Cup Cooked White Rice
1/2 Cup Fresh Spinach
1 Slice Red Onion (chopped)
3 Diced Baby Portebella Mushroom
2 oz of Mozzerella Cut in Small Chunks
1/4 Cup Shredded Parmesian
4 Medium-Large Tomatoes
You can use any kind of cheese, mushrooms, onions or you can add anything like diced peppers to your liking
Take a strainer and put a bowl under it, slice the top of the tomato off and lay the sliced top in baking dish then cut out the inside of your tomatoes until all seeds are gone set empty tomato on the top of the slice of tomato in the baking dish keep juice and seeds seperate ( you can either cut up the left over inside of the tomato and add to juice with out seeds or toss the seeds and leftover chunks of tomato)
In a seperate bowl combine cooked rice, fresh spinach, mushrooms, onion, mozzerella and shredded parmesian and mix. Take mixture and stuff your hollow Tomatoes, once stuffed you can sprinkle the top with parmesian or any other cheese you deciede to use. Then take the juice from the tomatoes and poor ontop and on bottom of baking dish.
Bake on 375 degrees for about 15 to 20 mins or until cheese melts
This is soooo yummy I made them today and I didnt even have to use any salt or pepper they had such good flavor and just one tomato is pretty filling. I you dont like warm tomato then you might just want to try the stuffing :happy: Hope you enjoy!!
