Always high Carbs...grrrr

Having done this diet for 2.5 weeks now, I am starting to see trends:
I tend to eat about 300 calories less than what I am allowed every day,
My fat contents is less than half I am allowed on most days,
my protein is looking good too...
....but I just don't seem to do well on those carbs.

Today I had my worst result so far; finishing my day having eaten 270 carbs instead of the 200ish I am allowed (after 15 minutes of exercise)
I generally have 1 slice of toast in the morning with a thin layer of strawberry jam, soup (on its own) for lunch and a normal, but smaller sized meal in the evening (and yes, this generally does incldue patatoes or rice or pasta).
I enjoy my fruit (Melon and pineapple- plus a pear (25 carbs!) today) and veg (Cucumber and Carrots) to snack on and may treat myself to a cracker or 2 or a ba of quavers.

Surely this isn't an unhealthy diet!

How can I get my carbs down (as a veggie) without putting me off my diet because of it being impossible to stick to?

Does it really matter that I am high on carbs if I am low on everything else?

    It doesn't matter at all if you want to loose weight, what matter is the calories deficit :)

    First up, it might be a good idea to make your diary public so we can give you informed comment.

    So long as you stay under your allotted calories you will lose weight. However, some people find high carbs make them feel hungry, which is why reducing them and increasing protein can make losing weight feel easier.

    Many people even change the default ratio to 40/30/30 carbs/protein/fat so more calories come from protein and less from carbs. I stick with the default and rarely go over carbs, but that's because I seldom eat fruit as I much prefer veggies! Your fruit and veg intake sounds exemplary!

    MFP already figures in a 500 calorie defect, so please aim for that number rather than staying significantly under, including eating at least some of any exercise calories (I eat all mine as do some of MFP's biggest success stories - opinions vary!).
