light homemade pimento cheese recipe, anyone?

i'm making sandwich snack stuff to stock my fridge with.
im planning on buying lots of fruit and veggies, hummus (yummus!), and other healthy-low cal things.

i reallllly want to make some pimento cheese, but have never done it before. i've looked online for some low-cal recipes, but want your ideas, too!
