How to track fat in the frying pan

I was wondering how others do this. If you're frying food and use a tbsp of oil do you include the ful tbsp in your diary? I can usually see some residual fat left in the pan but it's impossible to know just how much is in the food vs pan. What do you usually do in this situation?
