Are rest days important if you are just doing cardio?

I started to change my lifestyle just shy of 3 weeks ago (a newb, I know), and I have been going on my elliptical every day since (other than one day that we got close to a foot of snow so I shovelled for my workout). I have the resistance fluctuating between level 4-8, but I maintain my speed through the course. I am now up to 30 mins comfortably.

Am I supposed to be giving myself a rest day?

I also started the 30 day shred on Monday (23rd), and have continued going on my elliptical. Is this too much? Is there such thing as too much exercise? For the most part I eat back my exercise calories, consuming 1300-1800/day in total. I am 5' 2" and 160 lbs (down 5 lbs since I started...on a side note, I lost the 5 lbs in the first week and a half, and nothing since?? Is that normal??)
