Get him a subscription to Vegetarian Times magazine, that way he will get new recipes each month. I love my VT subscription, they give lots of good advice and tips too0

I highly recommend "Sundays at Moosewood"

Moosewood is a famous vegetarian restaurant in upstate NY. Sundays are their "international" day, and this book is a collection of their favorite recipes from around the world.
Some of my favorites:
Blackbean tosadas (black beans with orange juice, cumin and coriander). I generally don't make the tostadas, but serve these as burritos. If you use canned beans, this is a great weeknight dinner.
Stuffed Vegetables with Spinach and Artichoke Hearts. Even non-vegetarians like this one
Mocha pecan pie: My go-to dessert for potlucks. If you use a pre-made pie crust, everything goes into the blender and you're baking in less than 10 minutes
Some of the recipes in "Sundays" can be a little daunting if you're new to cooking (primarily because of the range of the cuisines). If you're new to cooking, I recommend the original Moosewood cookbook:
