Oysters

I am planning to introduce oysters into my diet. Does anyone here have tips on buying and preparing? I want this to be a good experience and prefer not to eat them preserved and from a can.

    Rule #1: Buy from a source you trust. I live in New England where there are plenty of fish markets where you can get great seafood and you can trust the counter help to steer you in the right direction. I am not sure where you live and what is available to you.

    As for preparation, they are good raw with a little lemon juice or grilled until they just open, or shucked and baked...endless possibilities!

    I like them lightly steamed, and freshly shucked. (they shouldn't taste like rubber!)

    I just ate about 50 for lunch today. Things were big, almost put myself in to a food
    coma.

    Make sure they are not open when you buy them, that they are sitting in ice. For max nutrition, shuck them and eat them straight up raw (you can add a dab of sauce, lemon juice, vinegarette, etc to make them a little tastier). They are one of the absolute best sources of zinc around.

    (I work next to a fish market and know way too many fish mongers).
