Easter Breakfast Casserole ~ 263 Calories

This recipe is called Easter Breakfast Casserole but can be made anytime. Infact, it's what we're having for Dinner tonight!
6 English Muffins
1/4 cup Country Crock Lite, melted
20oz Bob Evans Home Fries
1/2 cup Lite Mozzarella Cheese Shredded
1 cup Kraft Mild Cheddar Shredded
12 Large Eggs
2 cups Skim Milk
8 Slices Oscar Mayer Smoked Turkey Breast
1/2 tsp salt
1/2 tsp pepper
Cut the English Muffins up into cubes and place in a 9"x13" sprayed baking dish. Drizzle melted butter overtop. Layer the Home Fries and cheese ontop. In a bowl mix the eggs, milk, salt and pepper. Pour overtop the cheese. Layer Turkey breast on top. Bake in oven at 350 for 40-45 minutes. Slice into 12 pieces.
You can also make it the night before. Just make sure you take it out of your fridge half an hour before you want to start baking it. And feel free to add whatever toppings you want. The original recipe calls for crumbled bacon but I didn't have any so I used what I had in my fridge..........turkey breast! Enjoy!
