    If only
  • I really like this recipe. It doesn't have any added sugar and it's also vegan. I usually customize the recipe by adding dark chocolate chips, coconut flakes or nuts.

    Ingredients:
    •1/3 cup peanut butter
•2 ripe bananas (overripe is fine)
    •1 tsp vanilla
    •2 tbsp soy milk
•2 tbsp maple syrup (I've substituted molassass. Honey will work as well)
•2 ½ cups quick cooking or rolled oatmeal
    •dash cinnamon (optional)
•1/4 cup flour (if you want this gluten-free, try ground flax seed instead)

    Preparation:
In a large bowl, mash bananas with a fork until smooth. Add peanut butter, soy milk, vanilla and maple syrup and mix well. Add remaining ingredients and stir until well combined.
Drop spoonfuls of dough onto an ungreased cookie sheet and bake 13-16 minutes at 350 degrees, or until done.

Note: This recipe is only truly sugar-free if you used unsweetened peanut butter and unsweetened soymilk, so read the ingredients list and look for soy milk that says "Unsweetened" right on the label.

I like how it only yields 12 cookies. Portion control is a prob.

Wow - this is basically the same recipe as my regular chocolate chip cookies. Its amazing how cutting out the butter/crisco and replacing 2 eggs with 1 egg white, it cuts down on so many calories. Chocolate chip cookies are my ultimate weakness. I'm definitely going to try this recipe. Thanks!!
