Homemade Southwest Chicken Salad w/ Cilantro Lime Dressing
I had this for dinner last night!
Southwest Grilled Chicken Salad with Cilantro Lime Dressing

Calories - 407 Fat- 5 Carb - 53 Protein- 38

-3 oz of chicken (cooked either grilled or baked)
-1-2 cups of lettuce
-1/2 cup of yellow hominy (or corn)
-1/2 tsp ground comin
-1/4 tsp garlic powder
-1/8 cup red onion
-1/2 Mission- Carb Balance Tortilla (Fajita Size)
-5 grape tomatos (halved)
-Kraft Fat Free Mozzerella Cheese
-Pam - Olive Oil Cooking spray
In a skillet on medium high, mix togther the hominy, cumin, garlic powder, and red onion. Saute with the cooking spray until the hominy turns a little bit dark.
Afterwards toss in the cooked chicken and cook for another 5-6 minutes.
While the chicken is cooking, slice into strips and spray the tortilla. Broil in the oven until it gets crispy.
After chicken mixture is cooked, serve on top of lettuce and grape tomatos. Add the cheese, and tortilla strips.
-2 tbsp of fat free ranch dressing
-1/2 lime
-1/8 cilantro
Mix together the dressing, sqeezed lime juice, and cilantro together to make your dressing. Serve with salad.
