Okay...what's for dinner?

I am looking for some new ideas. I have two young sons, 5 and 7 years old, and a husband at home. My husband and older son are picky eaters. None of them likes tomatoes, but they will eat tomato soup from the can (don't ask for the logic, it's beyond me. They don't like actual tomatoes I guess.). As I grow weary of making hamburger helper every night, I am looking for new ideas.

We're not having a great dinner tonight. the kids and hubby are having homemade mac and cheese, hotdogs and fruit. I'm having a chicken salad.
But last night we had oven fried chicken legs, steamed carrots and fries. Night before that was bbq chicken legs, salad and homemade buns.0 -
nearly nothing as I blew my calories for the day at lunch. Rats.0

chicken breast with noodles, eggs and veggies?
my husband is a picky eater.. but slowly he is coming around to more foods. He finished a full plate of veggies today that were with the meat and didn't even complain. Couple of years ago I had to smuggle green leaves on his hamburger and recieve lots of complaints for it hehe.0 -
Tonight I'm making a munchie type dinner to eat while I introduce my husband to one of my all time favorite movies (the original In-Laws). I'm making Chicken nacho bites.
Saute one fresh jalapeno and 1/2 med onion in a little olive oil until soft.
Mix the pepper and onion with a can of reduced sodium fat free refried beans and some leftover shredded chicken.
Fill Tostitos scoops with the mixture and place on a baking sheet
Top each with a slice of jarred jalapeno and a bit of reduced fat cheddar cheese
Bake until the cheese melts and serve with fresh salsa.
I have to leave out the jalapeno for him but my 9 yo grandson absolutely loves these! (I put chopped green onion on the top of his)0 -
I plan on having a large baked sweet potato with a bit of cinnamon butter and maybe a tad of brown sugar, pork tenderloin, green giant brocolli and cheese. at least that's what I'm planning on...whether or not I can correctly COOK said items is going to be a whole different matter altogether.0

make mini pizza and that way your boys can get interactive in the pizza. You can use english mufins or tortilla shells,and they can add their own toppings and cheese. This way you can add lots of veggies/good stuff to your own without making them suffer.0

My daughter loves to cook, and my husband and I love to eat. She is always looking up recipes online and trying them on us. I just have her trade out ingredients: 99% lean ground turkey instead of hamburger, turkey bacon/sausage instead of pork, fat free sourcream, etc., etc., etc. I know a lot of people say they hate the turkey products (my farm raised hubby said the same thing), but if you season them up REALLY well, they're just fine. My husband says he can tell it's not beef, but it's good enough that it's totally worth the health benefits. Many products like cornbread mixes, muffin mixes, etc. have a low cal/low fat/low sodium alternative, and the difference is minimal if any. They'll get used to it VERY quickly and everyone will be the better for the switch.0

Lately I have been actually pan frying tilapia fillets, and they are absolutely delightful! Makes me feel like I'm cheating, and yet I'm not at all! Plus, you could make yours separate from the rest of the families to control more closely the amount of oil you use.
Tonight I will take 8 oz of tilapia fillets (200 calories/40g of protein/5g fat), roll them in 3 Tbsp of Louisiana Fish Fry (30 calories/8 carbs), and pan fry them in 1 Tbsp of olive oil (120 calories/14g fat) in a non-stick skillet...and pair it with 2 cups of steamed broccoli for only 410 calories!!! Some days I might add some brown rice or another starch of some sort. It tastes DELICIOUS...feels guilty...and yet it is spectacular! Plus, 8oz of tilapia is like 3 fillets. You definitely wouldn't have to eat that much if you were trying to conserve calories even more.

hubby will be eating beer brats in hot dog buns. not sure what he'll have for sides.
i'll be having a sweet italian turkey link (instead of brats) in a hot dog bun. i'll also have a side salad and some canteloupe.0 -

I know, it was wonderful and, you are in the right place for Burns, lol0 -
1 Box of Jiffy Cornbread mix...mix it and put in the bottom of cassorole pan. Then top with chicken, beef, turkey (you see where Im going) just your favorite meat.
Then Put a can of soup mixed with a little water so it spreads better on top of that.
Add a variety of veggies ( I prefer spinach, onions, green peppers, asparagus)
Top with cheese
bake according to the cornbread directions on the box
It is delicious. There are so many variations that its kind of my go to dinner. Just use what you have. My kids like it so much that my teenager will actually take it and eat it cold for lunch at school.
At my house I put in green chilis for me and my husband and sometimes put black beans inside also.0 -

i hate picky eaters,
i like wraps with canned refried beans (fat free cheese , ft free sour cream)
i make melty sammiches on the GF grill,
boil some potatoes then cut them up sautee them with butter and garlic powder
ummm make pasta
make a sauce, if t calls for tomatoes then put it in blender and blend until nobody can notice you had tomatoes in there.
tonight everything is frozen, but i think i have some left over ground chicken, ill probably cooked that and serve with rice and corn.

do they eat eggs and toast? we love eating breakfast for dinner !
take 1 slice of bread then cut a circle in the middle ( i use a small metal drinking cup) using a non stick fry pan then put bread into heated pan then add a 1/3 pat of butter into the circle then break a egg inside cut circle. cook till whites is just set and edges are golden then turn over and cook other side.. brown the bread circle in the fry pan too, and flip over when browned.
i sprinkle a tiny amt of cheddar on top of the cooked egg and top it with the toasted circle..
serve with some turkey bacon and there is an easy breakfast.. for dinner

tonight myself and my three kids (4yr old twins &3 yr old) all had baked potato, black beans & low fat cheese. Super filling and full of fiber! ( I did put a tbsp of I can't believe its not butter on mine)0

I tend to have the same thing on weekdays since I work until midnight, so it's a turkey sandwich with whole wheat bread and some garden salsa sunchips. But for lunch I had a piece of oven-fried chicken, then mixed veggies (corn, carrots green beans) and a serving of steamed broccoli since it's my fav.0
