i use canned salmon in place of tuna in casserole - i used greek yougurt for the sauce, cooked up some onion and whole wheat pasta, mixed in some normandy mixed veggies and some cheddar and parm cheeses - i made 4 big servings @ 508 calories, but you could easily make it 8 servings.
ive also used canned salmon to make stuffed portobello mushrooms. i think i found the recipe on dole.com
for fresh i usuallly bake it with a little olive oil and salt and pepper. sometimes ill put it in a pan with some water, lemon juice and herbs..put a lid on and let it steam0 -
I drizzle salmon with some olive oil, season with salt n pepper and I add chilli pwd for heat. then I top the whole thing with sauted spinach( spinach finaly chopped & sauted with fresh garlic) & bake at 400 deg for 20 min or till done( depend how thinck it is). I serve this roasted broccoli /asperagus(sp?) .0
